- 3 oranges
- 3 lemons
- 1/2 cup sage leaves (fresh)
- 2 bay leaves
- 1 Tbsp. whole peppercorns
- 5 large garlic cloves (peeled and smashed)
- 4 qt. water
- 250 grams kosher salt (1 cup Morton, or 1 3/4 cup Diamond Crystal, or 3/4 cup table salt, plus more if needed)

Was really good! I think we could have used more sage and citrus peels but over all it was juicy and delicious.

Smells great...i added celery and tyme.....still brining ....tomorrow will cook it up

First time brining a turkey—never going without it again! We added dried rosemary from our garden, and used a blend of peppercorns. Turkey was moist and flavorful, especially the white meat!

The best but only brine I have made. My mom who at 85 has made many brines wanted this recipe from me. Woohoo
