Turkey Breast with Pear and Camembert

  • 1 1/3 pounds turkey breast (cut into 4 medallions)
  • 1 tablespoon oil
  • 1 tablespoon butter
  • 1 pear (thinly sliced)
  • sugar (for sprinkling)
  • 1/3 pound camembert cheese (sliced)
  • 4 teaspoons cranberry sauce
  • toasted baguette (slices, to serve)

    Directions

    1. Preheat the oven to 400°F and line a baking sheet with parchment paper. Season the turkey with salt and black pepper. Heat the oil in a frying pan and fry the turkey, turning, for 3 mins. Remove from the pan and drain on paper towels.
    2. Melt the butter in a separate frying pan and sauté the pear for 2 mins, turning. Sprinkle with sugar. Lay the pear slices in 4 circular clusters on the baking tray. Top each with a piece of turkey, 1/4 of the cheese and 1 tsp cranberry sauce. Bake for 5-7 mins, until the cheese has melted. Serve with toasted baguette slices.
