- 10 dried plums (chopped)
- 1/2 onion (finely chopped)
- 1/4 tsp. canela
- 1/4 tsp. allspice
- 1 bay leaf
- 1/4 cup dry white wine
- 10 prosciutto (strips)
- olive oil (Some extra, for the roulade)
- 3 medium potatoes (like russet, peeled and cut into wedges)
- 2 sweet potatoes (white, like O’Henry, peeled and cut into wedges)
- 1/4 cup olive oil
- 1/4 cup water
- salt
- pepper
- 3 tsp. dried oregano
- juices (from the pan)
- 1/4 cup dry white wine
- 1/4 cup jam (peach or cranberry is very nice)
- 3 Tbsp. butter (cold)
- 1 pinch salt (if needed)
