- 1 leek (thin, halved, trimmed and cleaned, then thinly sliced)
- 2 Tbsp. fresh thyme (chopped)

- 2 cans tuna (pole-caught sustainable, in water, drained and coarsely flaked)
- 2 tsp. lemon juice
- One 12-ounce package extra-wide egg noodles
- 1 cup crushed cheese crackers (soda crackers or panko)
- 3/4 cup Parmigiano Reggiano (grated)
- 1/4 cup celery tops (and flat-leaf parsley, finely chopped)
