- 1 potato (large, diced)
- water
- salt
- 426 grams canned tuna (drained)
- 2 celery stalks (finely chopped)
- dried tarragon (crushed)
- 4 Tbsp. low-fat mayonnaise
- 1 Tbsp. mustard
- ground black pepper
- 4 pita breads (large)
- lettuce
- jalapeno chilies (optional)

Directions
- Cook the potato in water with salt until soft. Drain and let it cool.
- In a large bowl, add the tuna, potato, celery, a pinch of tarragon, mayonnaise, mustard, and salt and pepper to taste. Cover with plastic wrap and refrigerate for 1 hour.
- Heat the pita breads, then cut them in half. Open the pita, then add lettuce and the tuna salad. Add jalapeno chilies to taste.
