- 1 kg potatoes (peeled and cut into equal size pieces)
- 100 mL milk (approximately)
- 2 Tbsp. butter
- mustard (to taste)
- salt (to taste)
- nutmeg (powder, to taste)
- olive oil
- 1 bay leaf
- 1 leek (thinly sliced , only the white part)
- 1 egg yolk (for brushing)
- 3 tomatoes (ripe, chopped, peeled and seedless)
- 2 Tbsp. tomato paste
- 1 grated carrot
- 2 cans tuna
- 1 tsp. dried oregano

Directions
- Boil potatoes in salt water until soft.
- Drain, and mash in the pan. Add the milk, butter, and mustard: Mix well.
- Season with salt and nutmeg to taste. Set aside.

Delicious! I substitute the milk for a plant based option, oat milk. I also didn’t brush the topping with the egg yolk. These changes were not a detriment to the end result! The tuna filling was really full of flavour and the potato topping was light and fluffy with a golden crispy crust. I will be adding this to our family favourite meals
