Ingredients

  • 250 grams penne pasta (dried)
  • 400 grams tuna steaks (cut into 2cm cubes)
  • 2 tablespoons olive oil
  • 2 carrots (peeled and grated)
  • 100 grams spring onions (trimmed and sliced)
  • 2 garlic cloves (crushed)
  • 250 grams cherry tomatoes
  • 125 milliliters dry white wine
  • 1 pinch caster sugar

    Directions

    1. Cook the penne according to the package instructions. Drain.
    2. Heat 1 tbsp oil in a large non-stick frying pan, season the tuna then stir-fry for 4-5 mins. Set aside. Heat the remaining oil and stir-fry the carrots and spring onions for 2-3 mins. Add the garlic and stir-fry for 1 min. Add the cherry tomatoes and stir-fry for 1 min. Add the wine, bring to a boil, stirring gently. Return the tuna to the pan along with the penne and a pinch of sugar. Toss to coat, season and cook until heated through. Serve.

    This was a GREAT foundation recipe to what I decided to do with it. I created the marinade as instructed, cut the fresh tuna fillets into one inch cubes and let sit in the marinade for a couple of hours. My alternative vegetables were multi-colored grape tomatoes, multi-colored carrots, multi-colored sweet peppers, zucchini and Italian parsley. One word: WOW! Get creative and have fun with this recipe ... there are so many options. ;-)
