  • 1 flatbread (wholewheat)
  • 1 tablespoon cream cheese (spreadable)
  • 1 1/4 cups baby arugula
  • 1/4 small carrot (peeled)
  • 1/4 cucumber (small)
  • 2/3 cup canned tuna (drained, flaked)
  • 4 cherry tomatoes (quartered)

    Directions

    1. Place bread on a cutting board with the short sides facing you. Spread with cream cheese. Arrange arugula over half the bread.
    2. Use a vegetable peeler to cut long strips of carrot. Do the same with the cucumber.
    3. Arrange carrot and cucumber strips across arugula. Top with tuna and tomatoes.
    4. Roll bread up to enclose the filling, sushi style. Wrap tightly in foil or plastic wrap and place in an insulated lunchbox with a small freezer pack.
