- 2 Tbsp. chopped cilantro (finely)
- 1 Tbsp. chipotle peppers in adobo sauce (finely chopped, OR 1 to 2 teaspoons chili powder, see note)
- 1/2 tsp. onion powder
- 1/2 tsp. garlic powder
- 1/2 tsp. salt (I use coarse, kosher salt, plus more to taste)
- 1 lime (about a teaspoon)
- 20 oz. canned tuna (well drained, I prefer albacore tuna packed in water)
- 12 flour tortillas (8-inch, see note)
- 3 cups shredded Monterey Jack cheese (cheddar cheese or Mexican cheese blend)
