- 1 can canned tuna (sustainable, drained, canned salmon, sardines, or mashed chickpeas would work too)
- 2 Tbsp. olive oil (or use from the tuna if packed in oil)
- 1/2 lemon (about 1 tablespoon)
- 1 pinch salt (and pepper)
- 1 head romaine lettuce (washed and chopped, any greens would work)
- 1 cup cabbage (chopped)
- 1 green onion (chopped)
- 1/2 cucumber (large, sliced or chopped)
- 1/4 cup peanuts (jungle, or raw peanuts)
- 2 tsp. sesame seeds
- dressing (Peanut)
- 1/4 cup peanut butter (use almond butter or sunflower butter too)
- 1 Tbsp. red wine vinegar
- 1 Tbsp. tamari
- 2 Tbsp. lime juice
- 1 Tbsp. olive oil
- 1 tsp. toasted sesame oil
- 1 clove garlic (peeled)
- 1/2 tsp. Dijon mustard
- 2 Tbsp. water
