  • 2 cups cremini mushrooms (sliced)
  • 2 shallots (large, minced)
  • 4 cloves garlic (minced)
  • 1/2 cup dry white wine
  • 3 tablespoons all-purpose flour
  • 3 1/2 cups almond milk
  • 3/4 cup manchego cheese (grated)
  • 3 tablespoons capers (drained)
  • 10 ounces chunk light tuna (drained)
  • 1 cup spinach (thinly-sliced)
  • 1 1/2 teaspoons dried thyme
  • 1 teaspoon kosher salt
  • 1/8 teaspoon black pepper
  • 1/2 cup bread crumbs

    Directions

    1. Preheat the oven to 375°F. Butter a 2 1/2- or 3-quart casserole dish and set aside.
    2. Cook the pasta until al dente in a large pot of boiling water. Drain and set aside.
    3. In a large saucepan, heat olive oil over medium heat. Add the mushrooms and shallots, and cook for about 5 minutes, or until shallots are translucent and mushrooms are beginning to soften.
