- 2 cans tuna (in water, drained)
- 2 chile peppers (jalapeno, seeds and veins removed, minced)
- 2/3 cup corn flakes (finely ground)
- 1 egg
- salt
- 2 Tbsp. vegetable oil
- lettuce (washed and cut into bite-sized pieces)
- 1 piece cabbage (shredded)
- 1 carrot (julienned)
- prepared salsa
- limes

Directions
- Mi the tuna with the jalapenos, corn flakes, egg, and salt. Form the mixture into 4 croquettes.
- Heat the oil in a skillet on medium-high heat. Fry the croquettes for 4 minutes on each side, until golden brown. Blot excess grease with a paper towel, if necessary.
- Place the lettuce, cabbage, and carrot on serving dishes and place the croquettes on top. Drizzle with salsa and serve along with the lemon.
