- 1 can chickpeas (aka garbanzo beans,, 15 oz can drained and rinsed)
- 3/4 cup chopped celery
- 1/3 cup red onion (finely chopped)

- freshly ground black pepper
- 2 medium tomatoes (sliced)
- 2 cups spinach
- pocket bread (Whole wheat pita)
