- 1 tomato (Buffalo, cut into cubes)
- 1 handful croutons (I make my own from some stale bread with olive oil and herbs)
- 90 grams prosciutto
- 70 grams rocket
- 2 Tbsp. rapeseed oil
- salt (to taste)
- 30 grams fresh basil
- 1 garlic clove (crushed)
- 2 Tbsp. lemon juice
- 50 grams grated Parmesan cheese
- 1 handful pine nuts (raw Cashew nuts work great too)
