- 1 shallot (halved)

I really like this recipe! I’ve made it twice in the last two weeks, trying to tweak it. The first time around I followed the directions and found the lemon way to overpowering, but my family thought it was perfect. Personal preference. Second time I used half the lemon, increased the amount of mangos while using larger chunks. Da bomb! Next time I maight use my own jerk seasoning mix which has a much richer, deeper taste than this recipe’s seasoning. Should be even better. Overall though, a great base recipe.
