  • 3 1/2 cups rolled oats
  • 1 cup coconut flakes
  • 1/2 cup slivered almonds
  • 1/4 cup pumpkin seeds
  • 3/4 cup bran
  • 1/3 cup macadamia nuts (roughly chopped)
  • 2 1/2 tablespoons butter (melted)
  • 1/4 cup honey
  • 1/2 cup dried pineapple (sweetened, chopped)
  • 1/2 cup dried mango (sweetened, chopped)
  • 1/3 cup raisins

    Directions

    1. Preheat oven to 350°F.
    2. Combine rolled oats, coconut, almonds, pumpkin seeds, bran and nuts in a roasting pan. Whisk together butter and honey then fold into oat mixture until evenly coated. Bake, stirring occasionally, for 25-30 mins, or until lightly golden.
    3. Mix in pineapple, mango and raisins.
