- 3 Tbsp. pitted dates (chopped, OR 3 tablespoons or chopped dried tropical fruit)
- 4 caramel corn flavored rice cakes (round)
- 1 banana (small, sliced)
- 2/3 cup pineapple chunks (fresh or canned)
- 3 Tbsp. sweetened coconut flakes (toasted)

Directions
- STIR peanut butter and dates in small bowl until blended. Spread evenly on rice cakes.
- TOP with banana and pineapple. Sprinkle with coconut, if desired. Serve immediately.
