- 3 tomatoes (medium-sized, chopped, into 1-2cm chunks)
- 0.8 mL boiling water
- 2 tsp. balsamic vinegar
- 100 grams sundried tomatoes
- 2 celery stalks (diced)
- 1 carrot (small, diced)
- 1 white onion (diced)
- 3 garlic cloves (finely chopped/minced)
- 600 mL vegetable stock (made with one cube, or any homemade stock that isn’t too salty)
- 2 tsp. balsamic vinegar
- 2 tsp. dried basil
