  • 2 cups all purpose flour
  • 1/2 cup bittersweet chocolate (unchecked½ cup finely chopped)
  • 1/4 cup Dutch process cocoa powder
  • 3 tablespoons cocoa nibs
  • 1 teaspoon baking soda
  • 1/4 teaspoon fine sea salt
  • 1 1/2 sticks unsalted butter (½ sticks, melted)
  • 1 1/4 cups white sugar (¼ cups Sugar In The RawⓇ Organic)
  • 2 large eggs
  • 1 teaspoon vanilla
  • 4 ounces white chocolate (finely chopped)

    Directions

    1. 1. Preheat the oven to 350℉
    2. 2. In a small saucepan, whisk together egg yolks, sugar, and cornstarch. Gradually whisk in milk until smooth and cook over medium heat, stirring constantly, until thickened. Whisk in butter, vanilla, and peppermint. Scrape into a bowl and press plastic wrap directly on surface. Refrigerate until completely chilled.
    3. 3. In a large bowl, stir together flour, chopped chocolate, cocoa powder, cocoa nibs, baking soda, and salt.
