- 3 cups unbleached all purpose flour
- 2 tsp. baking powder (aluminum free)
- 1 1/2 tsp. Himalayan salt
- 2 tsp. brown sugar (optional)
- 1 cup lukewarm water
- 1 Tbsp. butter (or oil, for rubbing on dough, optional)
- 1/2 tsp. instant yeast (optional, makes aloo pies softer but thicker and chewier)
- 2 lb. potato (I used organic golden or russet potatoes)
- leaves (5 large bandhania, aka culantro, recao, plus 1 thinly sliced, optional but recommended**)
- 1 small onion (finely chopped, I used Vidalia onion)
- 3 cloves garlic (minced)
- 1 tsp. roasted ground cumin (geera, more to your liking)
- 1 tsp. Himalayan salt
- hot pepper (bird pepper, habanero or scotch bonnet pepper, to taste)
- pepper (Pimento, Caribbean seasoning pepper, optional)
- 2 scallions (green parts or cilantro, known as Coriander is some places)
