  • 1 cup butter (soft)
  • 1 cup confectioner's sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 3 cups plain flour
  • 1 pinch salt
  • 1 3/4 cups Ghirardelli® 60% Cacao Bittersweet Chocolate Baking Chips (melted)
  • 1 cup Ghirardelli Peppermint Bark Baking Bars (or SQUARES crushed into small bits)
  • sprinkles (to decorate)

    1. Preheat oven to 375°.
    2. Using a food processor, blitz all the cookie ingredients together until big lumps start to form and then bring together with your hands into a large ball. (If you don't have a food processor you can do this by rubbing the flour and butter together with your fingertips, add the rest of ingredients and bring it all together with your hands).
    3. Wrap ball in cling wrap and chill in the fridge for 1 hour.
