Description
Barmbrack is a traditional Irish yeasted bread that usually contains sultanas or raisins. Bring a little Irish tradition into your kitchen with this recipe for Traditional Irish Barmbrack bread. Made with a sourdough starter, this Barmbrack is flavored with cinnamon and nutmeg and incorporates tea hydrated raisins and candied citrus fruit into the dough. Allow the Barmbrack to rise during the various steps of preparing the dough to allow the yeast to develop the gluten.

- 350 grams raisins
- 250 grams sourdough starter
- 275 grams flour
- 175 grams milk
- 1 egg
- 85 grams sugar
- 1/2 tsp. salt
- 1/2 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg
- 60 grams butter (softened)
- 60 grams citrus fruit (candied)

Directions
- Preheat the oven to 210 degrees Celsius. Pour prepared hot tea over the raisins. Let cool, setting aside for at least 2 hours.
- Mix the starter with the flour, milk, and egg. Mix well and form into a bowl. Place the dough into an oiled bowl and set aside to rise, halfway doubled in volume.
- Add the sugar, salt, cinnamon, and nutmeg. Knead to mix and add the butter, mixing constantly, until smooth.
