- 2 cloves garlic
- 3 Tbsp. lard
- 2 onions (sliced)
- 2 Tbsp. chipotles en adobo
- 1 tsp. dried oregano
- 1 chicken stock (litr home-made)
- 1 1/2 tsp. salt
- 220 grams cooked chicken (shredded, optional)
- 4 corn tortillas (x 15cm , cut into 1cm strips)
- 500 mL corn oil
- 1 1/2 tsp. chilli flakes ( dried chipotle)
- 1 avocado (stoned, peeled, diced and tossed in lime juice)
- 75 grams lancashire (or feta cheese, crumbled)
- 100 grams soured cream
- chopped coriander (small handful of freshly)
