- 1/2 tsp. ground cayenne pepper (depending on how spicy you like your fish)
- 1/2 tsp. ground cumin
- 1/2 tsp. garlic powder
- 1/2 tsp. onion powder
- 2 large eggs
- 1 tsp. cool water
- 1/2 cup vegetable oil (divided, for pan-frying OR vegetable or canola oil spray, for air frying or baking)
- kosher salt
- freshly ground pepper
- 2 cups cherry tomatoes (halved if small and quartered, if large)
- 1/4 cup yellow onions (chopped)
- 1 small jalapeño pepper (finely chopped, seeds removed for mild)
- 1 Tbsp. chopped cilantro
- 1 1/2 tsp. fresh lime juice
- 1 tsp. extra virgin olive oil

Yes I’d make it again I added
flour as well the chips it was tasty and we enjoyed it but I think
I’ll put a bit more seasoning next time
I also did not make the pico because I didn’t have all the ingredients
