- 9 lb. pork butt (Boneless)
- 16 cloves garlic (minced)
- 2 Tbsp. oregano (minced, fresh)
- salt
- pepper
- 6 Tbsp. vegetable oil
- 4 yellow onions (each, medium)
- 8 cloves garlic (minced)
- 112 oz. tomatoes (wt cans, coarsley chopped)
- 10 chipotle chile in adobo sauce (each, drained)
- 5 tsp. oregano (dried)
- 1 1/2 tsp. salt
- 1/4 tsp. sugar
- 12 French rolls (crusty)
- 2 avocados (each, peeled & cut lengthwise into thin slices)

Directions
- 1. Preheat oven to 475 degrees F.
- 2. Combine garlic, oregano, salt and pepper; cut 1-inch deep gashes all over pork with a small, sharp knife. Fill gashes with garlic mixture. Rub outside of pork with salt and pepper
- 3. Place in shallow roasting pan and roast 20 minutes
