- 1/3 cup yellow cornmeal (fine)
- 1 tsp. sugar
- 1 1/4 tsp. salt
- 6 Tbsp. unsalted butter (cut into 1/2-inch pieces and chilled)
- 2 Tbsp. olive oil
- 1/4 cup ice water
- 2 Tbsp. olive oil
- 1 large white onion (thinly sliced)

- freshly ground black pepper
- 2 cloves garlic (chopped finely)
- 1/2 bunch basil (or tarragon, washed, dried, and coarsely chopped, (to yield about 1/2 cup); plus 10 whole leaves)
- 1 ear corn kernels (about 1 cup)
- 1 dough (recipe Cornmeal Galette, see above)
- 1 tomatoes (large or 2 medium ripe, about 3/4 lb. total cut into 1/3-inch slices, drained on paper towels)
- 3 oz. Gruyere cheese (or Comté, shredded)
- 1 egg (beaten with 1 tablespoon water)
