- 1 Tbsp. red wine vinegar
- 1 lb. white beans (or Lima beans or pinto beans, soak overnight in refrigerator)
- 5 cups vegetable stock
- 1/4 cup fresh parsley (chopped, or 2 Tbsp. of dried parsley, optional)
