- 1 inch ginger (grated)
- 3 cloves garlic (grated)
- 1 tsp. cumin seed
- 1 tsp. black mustard seeds
- 1 tsp. seeds (fennugreek, optional)
- red chili flakes (to taste)
- 1 tsp. sugar (optional add if tomatoes are tart.)
- 1/2 tsp. turmeric powder
- red chili powder (to taste)
- salt (to taste)
- 2 Tbsp. canola oil

I used spices instead of leaves for use what I normally have on hand. Turned out great!
