- 2 cups yellow onions (thinly sliced, a large onion)
- 2 garlic cloves (medium sized, cut into thin slivers)

- 1 1/2 Tbsp. dry white wine (I used dry Vermouth)
- 1 tsp. fresh thyme leaves
- 1 Tbsp. freshly grated Parmesan (plus slices shaved with a vegetable peeler)

- tomatoes (Compari, sliced into 1/4 inch slices, larger than cherry tomatoes, but smaller than standard sized tomatoes)
