    Very rich in flavors
    I modified by not adding sun dried tomatoes and I used two tablespoons of tomato sauce instead of paste, still turned out amazing! A new favorite, can't wait to make it with sun dried tomatoes.

    I used the Olive oil from the sun dried tomatoes to start the process. Turned out fabulous. I also added a bit of crushed red peppers, anchovy Paste, 1 tsp. and finished with a squirt of lemon. Will make again!

    Pro tip: use fire roasted canned tomatoes. My boyfriend and I cooked this 3 hours ago and we’re still talking about how amazing this is. Best risotto either of us has ever made.

    I always modify recepies. My wife hates that about me. I added spinach (at the end), carrots and mushrooms and parmesan cheese. I did not have white wine. So I added white wine vinegar. Probably not as nice. Still, it turned out really well.
