- 2 cinnamon sticks (each 3 inches long)
- 2 mace (blades)
- 1 red onion (small, cut in half lengthwise and thinly sliced)
- 1 tsp. fresh ginger (shredded)
- 4 cloves garlic (medium-size, thinly sliced)
- 3 cayenne (fresh green Thai, or serrano chiles, to taste, stems removed, cut lengthwise into thin strips, do not remove the seeds)
- 14.5 oz. diced tomatoes
- 1 tsp. sea salt (or coarse kosher)
- 1/4 tsp. ground turmeric
- 1/4 cup cilantro leaves (finely chopped, and tender stems)
