This was pretty good, but if I make it again I'll made some adaptations. I couldn't taste the jalapenos at all (and I even left the seeds in), so I'd at least double if not triple them. I felt that 3 Tbs of honey was much too much but a little bit would still be a nice addition. Unfortunately, tomatillos can be overpowering, and roasting them for 25 minutes makes them soft but it doesn't decrease that harshness. I'd probably roast them longer until they're charred and smoky, and maybe even toss them in bit of oil first. I guess from the picture I expected more of a chimichurri flavor but the super-sweetness was unexpected. Maybe I could use this with the full amount of honey as a glaze for pork or poultry? All in all, it was pretty good and I wasn't disappointed.
