- 1 onion (medium, 8 ounces, peeled and coarsely chopped)
- 7 large garlic cloves (peeled, cut in half)
- 2 jalapeno peppers (small, split and seeded)
- 1/2 tsp. ground cumin
- 1 Tbsp. kosher salt
- 1/4 tsp. ground black pepper
- 5 1/2 cups chicken stock (or three 14oz cans low sodium chicken broth + ½ cup water)
- 15 sprigs fresh cilantro (tough stems discarded)
- 1 lb. ground beef chuck (20% fat)
- 1 lb. ground pork
- 1 onion (medium, 8 ounces, peeled, finely chopped, I used my mini processor)
- 1/2 cup cooked white rice
- 1 large egg
- 2 tsp. kosher salt
- 1/4 tsp. ground cumin
- 1/4 tsp. ground cloves
- 4 limes (1/2 cup)
- 10 sprigs fresh cilantro (coarse chopped)

I had a load of tomatillos from my garden and was looking for a use other than salsa verde or pork stew. This soup does not disappoint! It's exactly what you hope it will be! The clove adds a warm and an absolutely necessary touch. Also added mint as suggested in the other comments. Perfect and absolutely delicious!

Delicious soup. Easy to make. Great to have something else to do with all of the tomatillos.
