- 1/2 Tbsp. Thai Kitchen Red Curry Paste
- 500 mm chicken stock
- 2 spring onions (Cut into 1cm long 'coins'.)
- 1 clove garlic (finely sliced)
- 30 grams ginger (Cut into batons as thin as possible.)
- 1 kaffir lime leaves
- 100 grams mushrooms (Sliced about 3mm thick.)
- 250 grams shrimp (I use frozen but defrosted.)
- 150 mL coconut milk
- 1 Tbsp. fish sauce
- 1 tsp. soy sauce
- 1 tsp. brown sugar
- 1 stick lemon grass (Outer leaves removed and sliced.)
- 1 tsp. cooking oil
- 1 tomatoes (Cut into 8 wedges and deseeded.)
- 1 tsp. lime juice
- 1 red chili peppers (Finely sliced.)
- 1 handful coriander (Roughly chopped.)

Very tasty, i just used only lemon to replace all the other fancy tastes 🤷🏼♀️ and heavy Cream instead of coco
