- 900 mL stock (unsalted, chicken, vegetable or seafood)
- 1 cup water
- 2 stalks lemongrass (smashed and cut into chunks)
- 8 kaffir lime leaves (ripped)
- 2 inches galangal (piece of, sliced)
- 1 medium onion (roughly chopped or sliced)
- 4 red chilies (–5 fresh, cut in halves)
- 2 cloves garlic (smashed and roughly chopped)
- 1 Tbsp. Thai chili paste (Nam Prik Pao)
- 2 limes (–3 very juicy, 1/4 cup of lime juice, add more to adjust to taste)
- 3 Tbsp. fish sauce (add more to adjust to taste)
- 3 1/2 tsp. sugar (add more to adjust to taste)
- 6 whole shrimp (headless, or head-on – peeled or shelled)
- 1 bean threads (–2 bundles of glass noodles/, soaked in room temperature water)
- 1 handful mushrooms (any kind, chopped)
- 1 handful snow peas
- vegetable (any type of green, choy, shredded lettuce, peppers etc)
- fresh tomato (cut into chunks and added at the end)
- fresh pineapple chunks (cooked during the shrimp cooking step)
- basil (as a fragrant garnish, optional)
