- 2 cups low sodium chicken broth
- 1/2 lb. chicken thighs
- 1 1/2 cups coconut milk
- 1 tsp. salt
- 12 galangal (rounds of, sliced)
- 1 stalk lemongrass (pounded fiercely with the back of a knife & cut crosswise into 1-inch pieces)
- 5 pieces kaffir leaf (depending on the size)
- 3 pieces Thai chilies ((adjust the quantity if you want more spicy))
- 2 Tbsp. fish sauce
- 2 1/2 Tbsp. lime juice
- 1 tsp. palm sugar ((adjust the sweetness according to your preference))
- 150 grams oyster mushrooms (or straw mushrooms)
- 2 Tbsp. green curry paste ((this is optional but makes a difference)
