- 400 mL coconut milk (or 13.5 fl oz or 1 5/7 cups)
- 250 mL water (or 8.5 fl oz or 1 cups)
- 1 stalk lemongrass
- 3 lime leaves (or substitute with grated organic lime skin)
- 1 1/2 inches galangal (Thai Ginger)
- 200 grams boneless chicken (cut into stripes or 7 oz)
- button mushrooms (dozen regular, sliced)
- 3 chili (cut into smaller pieces, I used regular Indian Chili so 2 are usually enough)
- 2 Tbsp. fish sauce
- 3 Tbsp. lime juice
- salt (to taste)
- 1 tomato (cut into dices)
- chopped coriander (roughly, to garnish, optional)
