- 1/2 cup natural peanut butter
- 2 Tbsp. soy sauce (La Choy is gluten free, as is Tamari wheat-free)
- 3 Tbsp. margarita mix (be quiet. we were out of limes. it worked!)
- 1/2 tsp. ginger
- 2 1/2 cloves chopped garlic (we're still out, so I had to use the jarred stuff)
- 1/4 tsp. crushed red pepper flakes
- 1 bag baby spinach

I use 2 limes instead of the margarita mix, as suggested, and it was very sour tasting, way too sour for anybody in the family. Also the sauce never got very sauce-like, it was as thick as, well, peanut butter. There were some suggestions in the comments about adding water and using less lines, and I may try it again with these adjustments.
