- 1/2 cup cilantro leaves (coarsely chopped fresh, and stalks)
- 1 1/2 cups fresh spinach (coarsely chopped)
- 1 tsp. ginger (dried)
- 3 cloves garlic (coarsely chopped)
- 2 chile peppers (fresh green, seeded and chopped)
- 1/4 cup fresh mint leaves
- 1 1/2 Tbsp. lemon juice
- 1/3 cup greek yogurt
- 2 Tbsp. olive oil
- 1 onion (large, finely chopped)
- 1 pkg. tofu (pressed, drained, and cubed, feel free to use chicken or paneer!)
- 1 tsp. ground turmeric
- 1/2 tsp. sugar
- 1/2 tsp. cardamom
- 1/2 tsp. canela
- 1 head cauliflower (chopped into florets)
