    Not great but not bad either. I'm relatively new to tofu and 9 out of 10 of these recipes don't tell you that you've got to get all the water out of the tofu if you expect to brown it as they tell you to do in these recipes. Wet tofu of any kind will not brown and you need to press it out for an hour or more before you even cook it. That's my biggest gripe with tofu. The rest was ok. The noodles were more crunchy than they were noodle-y. Shirataki noodles are new to me. But I liked that there were little to no calories in the noodles.

    I subbed the tofu with boneless skinless chicken breast diced into cubes and the scallions for leeks (as this is what I had on hand). It was pretty good.
