- 14 oz. extra firm tofu (package, drained, pressed, and cut into 1-inch cubes)
- 1 inch ginger (piece, peeled and minced)
- 2 cloves garlic (minced)
- 1 carrot (shredded or grated)
- 1 bunch broccoli (chopped into bite-sized pieces, about 5 cups)
- 2 cups shiitake mushrooms (sliced)
- 2 scallions (chopped)
- 8 oz. shirataki noodles (drained and rinsed)
- 1 tsp. toasted sesame oil
- 2 red pepper flakes (teaspooons)
- 2 Tbsp. apple cider vinegar (or rice vinegar)
- 2 tsp. cornstarch
- 1 Tbsp. sesame seeds
- Sriracha (optional)

I subbed the tofu with boneless skinless chicken breast diced into cubes and the scallions for leeks (as this is what I had on hand). It was pretty good.
