- 1/2 block extra firm tofu (or firm, cut into cubes, I recommend using WestSoy Extra-Firm Tofu)
- 2 cloves garlic (minced)
- 1/2 Tbsp. olive oil
- 1/2 Tbsp. light soy sauce
- 1/2 Tbsp. olive oil
- 3 1/2 cups vegetable broth
- 4 white button mushrooms (medium, thinly sliced)
- 1 rib celery (thinly sliced diagonally)
- 1 carrot (sliced into ribbons using a vegetable peeler)
- 1/8 cup red onion (thinly sliced)
- 1 cup chopped kale (packed, of, stems removed)
- 1/3 cup frozen peas (or fresh)
- 1 1/2 cups rice noodles (uncooked, approx.)
- 3 green onions (thinly sliced on a diagonal, for garnish, optional)

This dish tasted delicious. No extra seasonings are needed. Next time, I may freeze the tofu first and let it thaw out and then marinate overnight to give the tofu a denser texture. Overall, this is easy to make and tastes good. All of the ingredients are already in the house so you can put it together in about 30 minutes.

The soup was really good. The recipe didn’t call for any seasoning so I assumed it was salt to taste. 9/10 would recommend!

very easy to make. jus finished. about to eat and enjoy. 🤣🤣 i used bean thread and substitute spinach for kale.
