  • 400 grams firm tofu (~ 14 oz, pressed and cut into bitesize pieces)
  • 2 tablespoons peanut butter
  • 2 tablespoons soy sauce
  • 1/2 tablespoon Sriracha
  • 150 milliliters coconut milk (~ 1/2 cup, I used light)
  • 1 red chilli (mild, finely chopped, remove seeds for less heat)
  • 1 spring onion (chopped)
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground turmeric
  • 10 stalks tenderstem broccoli
  • 10 pieces baby corn (halved lengthwise)
  • 10 pieces mange tout
  • 6 mushrooms (medium, diced)
  • cooked rice
  • chopped peanuts
  • chopped coriander
