- 2 macadamia nuts
- 3 Tbsp. lemongrass (sliced, white ends)
- 2 Tbsp. sambal oelek (or other savory red chile paste)
- 1/4 cup peanut oil
- 1 Tbsp. tamarind paste (mixed with 1/3 cup water)
- 1 Tbsp. dark soy sauce
- 12 oz. coconut milk
- 1 Tbsp. brown sugar
- 1 cup unsalted peanuts (roasted, coarsely chopped)
