- 1 tsp. brown sugar

- 1 pinch salt
- 1 cup rice (I have used basmati rice)
- 1 1/4 cups water
- 1 tsp. oil (for rice)
- 2 garlic cloves (minced)
- 1/2 cup carrots (chopped)
- 1/2 cup green bell peppers (red and, chopped)
- 1/2 cup edamame
- 1/2 yellow onion (sliced)
- 1/2 cup spring onions (chopped)
- 2 Tbsp. soya sauce
- 2 tsp. Sriracha sauce
- 2 Tbsp. oil (add more if necessary)
- 1 tsp. brown sugar
- salt (as required)

I used Sweet Chili Sauce instead of Sriracha, and Vegan Marinated “Mock Chicken” instead of Marinated Tofu. It was delicious!
