They actually turned about way better than I thought they would!
I doubled everything on the ingredients list because I figured I'd make more, but I'm not the greatest with shaping pancakes and ended up making 7 or 8 giant ones. Definitely delicious.
The toasted coconut in them is incredible.
I look forward to making them for my family on a weekly basis.
I'm sure that if you put an egg in the mix you can use this recipe for muffin batter. :)
