- 2 cups carrots (grated)
- 1 cup shredded sweetened coconut
- 1 cup chopped nuts (optional)
- 1 tsp. vanilla
- 1 cup Dole Crushed Pineapple
- juice

- 1 cup butter (softened)
- 16 oz. cream cheese (softened)
- 2 tsp. vanilla
- 2 lb. powdered sugar
- toasted pecans (top with, or coconut if desired)

Really good! Tasty! I did not modify this recipe. I used 3 1/2 cups of icing sugar.

The cake was ok. I will double all the spice next time, as it didn't have much flavor. Was a dense texture which we liked. I used the applesauce instead of the oil. I also made 1- 1/2 times the frosting for fear it was not enough, and I'm glad I did! The frosting definitely saved the cake!

so so so good! I followed recipe with the following exception: used 1/3 cup sugar instead if 1/2 a cup and used crushed pineapple in juice instead of applesauce. Received raving reviews at the gathering I brought cake to. Made three layer cake and had plenty of icing. Also, I love that this is a pretty straightforward cake recipe.

Loved this.. next time. will use a little less sugar as it was just a a little too sweet for me but other than that it was perfect.
