- 10 green tomatoes
- 1/4 onion
- 1 clove garlic
- 4 chilies (arbol, cut in half)
- 5 chilies (rattle, cut in half, or Guajillo chilies)
- 1/2 cube tomato bouillon (or a roasted tomato)
- salt (optional)

Directions
- In a saucepan, add the tomatoes and the onion. Stir occasionally and cook until just before these are burnt on all sides. Add the garlic and continue to cook for 1 or 2 more minutes.
- Separately, place the chilies on a griddle. Stir constantly to keep them from burning.
- Remove from the stove and add to a blender, along with the tomato bouillon. Puree until smooth.
- Taste and season with salt if needed.
