- 1/2 yellow onion (a large white/, finely chopped, you will need about a cup)
- 3 garlic (extra large cloves of, minced, you will need 1 packed tablespoon of minced garlic)
- 2 cups broth (LOW sodium veggie, separated, I use Pacific brand)
- 1 tsp. fine sea salt
- 1/4 tsp. ground black pepper (this gives a bit of kick which I think is perfect, but if you are sensitive, use a little less)
- 3 Tbsp. brown rice flour (OR regular all-purpose flour)
- 2 fresh thyme (long sprigs of, use 4 if they are short sprigs)
- 2 Tbsp. nutritional yeast (per preference)
- 1/4 cup cabernet sauvignon (or use another similar full-bodied red wine)

2ND time: Made as directed - This was delicious, though a bit watered down, so I added more flour, garlic salt, and some greek yogurt for thickening.
This was incredible - we were camping, so we didn't have a chance to puree it, but it was a huge hit for Thanksgiving - even for Papa John who doesn't drink.

Added a corn starch slurry to thicken faster but was awesome tasting on lobster mash potatoes!
