- 5 oz. queso fresco (plus extra for garnish)
- 5 oz. shredded mozzarella
- 1/2 cup grated Parmesan
- 4 green onions (thinly sliced, save a bit out for garnish, optional)
- 1 sauce (recipe of Ranchero, I add a little extra vinegar and a pinch more cayenne for this dish.)
- 3 cups pulled pork (or Mexican shredded, left over is fine)
- oil (for the tortillas, enough to come 1/4 inch up skillet)
- sour cream (for garnish, optional)
