- 3 cups low sodium vegetable broth
- 3 cups water
- 15 oz. kidney beans (1 can, no-salt added, drained and rinsed)
- 15 oz. no salt added navy beans (1 can, drained and rinsed)
- 15 oz. no-salt-added black beans (1 can, drained and rinsed)
- 2 cups frozen corn kernels (or fresh)
- 2 tsp. apple cider vinegar
- 1 Tbsp. maple syrup
- 1/2 tsp. kosher salt
- freshly ground black pepper (to taste)
